I observe, I listen with a stethoscope, but I only intervene when the dynamics of this curve appear unnatural. It must be smooth. However, to get it going again sometimes you just need to give it a little attention, a short pumpover that gets the lees moving once more. Wine has a heart, I listen to it its beat. It is important to be close.
